It’s more than a crush. It’s an obsession.

There is nothing better than venturing down to the vineyards just before crush. I love taking random cluster samples and seeing the different flavors my grapes have produced. I love giving the vineyard manager the go-ahead to start harvesting. And making sure each grape is hand-picked to get the TLC it deserves.

I like my hydraulic basket press with the old-fashioned monkey crank. Playing loud music and laughing as we work. I even love the extra muscle on my biceps after hand-cranking tons of grapes. (Come by the winery sometime. We’ll arm wrestle.)

Best of all, I love being deeply involved in every step of creating the wines that people love — and I am proud of. When you work on something that’s this close to your heart, passion comes with the territory.

What’s with the barrels, mon ami?
Ah, the French barrels. They give our wines that buttery-soft texture, that hint of vanilla, that je ne sais quoi…

We figure that as long as you’re taking the time to grow and cultivate premium quality grapes, you may as well make them comfortable while they work the rest of their magic. So we put ours up in barrels made of 100% French oak, hand-selected from different parts of France’s renowned forests.

Here’s le scoop. Over time, oxygen seeps into the barrel through the wood, softening the wine and imparting subtle little flavors. Because oak barrels come from living plants, no two are alike. Each leaves a unique imprint on the wine that varies from year to year.

It’s why Couvillion wines are so velvety smooth and deliciously drinkable — alone, with food or, if you visit the winery on just the right day, straight from the barrel. Santé!
